Abstract

La pérdida de sabor que ocurre después de que una pieza cortada de fruta o verdura fresca se pone en conserva con ascorbato de calcio y después se almacena es solucionada añadiendo químicos acentuadores de sabor a la pieza cortada de fruta o verdura junto con el ascorbato de calcio. Los tipos y las cantidades de químicos acentuadores de sabor se seleccionan sólo para compensar esta pérdida de sabor y no para introducir notas de sabor nuevas ajenas a la fruta o verdura.
