Abstract

La presente invención se relaciona con un polipéptido que tiene actividad de endoproteasa específica para prolina, en donde el polipéptido tiene menos de 70% de actividad residual cuando el polipéptido se ha mantenido a una temperatura de 65°C durante 15 minutos. La invención se relaciona además con un polipéptido que tiene actividad de endoproteasa específica para prolina que comprende una secuencia de aminoácidos de acuerdo con SEQ ID NO: 1, en donde SEQ ID NO: 1 comprende al menos una sustitución de aminoácidos seleccionada del grupo que consiste de una combinación seleccionada del grupo que consiste de P469A, P469C, P469D, P469E, P469F, P469G, P469H, P469I, P469K, P469L, P469M, P469N, P469Q, P469R, P469S, P469T, P469V, P469W, P469Y, un ácido nucleico que codifica un polipéptido que tiene actividad de endoproteasa específica para prolina, un método para fabricar un polipéptido variante que tiene actividad de endoproteasa específica para prolina, una célula hospedera recombinante y un método para producir el polipéptido y un proceso para la preparación de un producto alimenticio o de pienso en donde se utiliza el polipéptido.
