Abstract
La presente invención hace referencia a un método para producir un concentrado lácteo líquido, el método comprende: proporcionar un ingrediente lácteo líquido que tiene un contenido de grasa de al menos 35 % en peso, concentrar el ingrediente lácteo líquido por ultrafiltración y/o diafiltración para obtener un ingrediente lácteo líquido concentrado como el retenido; incorporar sacarosa y/o citrato trisódico para formar un retenido modificado; mezclar el retenido modificado con uno o más ingredientes adicionales; y homogeneizar la mezcla para formar un concentrado lácteo líquido, en donde, durante el paso de mezclar el retenido modificado con uno o más ingredientes adicionales, el retenido modificado está a una temperatura de al menos 60°C.
