Abstract
Se describen métodos para la producción de azúcar a partir de material vegetal que contiene azúcar con control microbiológico, que incluye el tratamiento de materia prima vegetal que contiene azúcar y/o un componente derivado de la misma, y/o un medio que contiene la materia prima vegetal y/o el componente, con monocloramina. La monocloramina usada en el método puede reducir la pérdida de azúcar a partir de los consumos de bacterias en el procesamiento de materiales vegetales que contienen azúcar, como el betabel azucarero, sin causar efectos adversos sobre el producto de azúcar, tales como el brillo del azúcar blanco.
