Abstract

Un método para sanitizar producto al: tratar el producto con una solución de dióxido de cloro durante un periodo suficiente para sanitizar el producto; tratar el producto con una solución conteniendo cloro durante un periodo suficiente para sanitizar adicionalmente el producto; y tratar el producto con una solución conteniendo ácido peroxiacético durante un periodo suficiente para sanitizar adicionalmente el producto, donde el tratamiento con la solución de dióxido de cloro, la solución conteniendo cloro y la solución conteniendo ácido peroxiacético produce al menos una reducción adicional de 1 unidad logarítmica de carba microbiana, como se copara con el producto tratado con una sola solución seleccionada de la solución de dióxido de cloro, la solución conteniendo cloro y la solución conteniendo ácido peroxiacético.
