Abstract
Se exponen aquí papas no fritas que se producen sin freírlas en aceite para reducir el contenido del mismo pero que tienen una textura crocante y buena capacidad para suavizarse en la boca, lo cual no lo pueden lograr de forma suficiente las papas rio fritas convencionales, por lo tanto son comparables con las papas fritas producidas por el freído en aceite. El interior de las papas no fritas se infla suficientemente y tienen varios poros. En términos más específicos, las papas no fritas tienen 10/mm2 o más orificios con diámetro corto de 20 µm o más y una a porosidad de 35% a 65% cuando se observan sus secciones verticales.
