Abstract
La presente invención se relaciona con una emulsión de aceite en agua que comprende un emulsionante fosfolípido, el emulsionante que comprende lisofosfolípidos y métodos para producir la emulsión. La emulsión es útil como una base para productos alimenticios y de bebidas, por ejemplo cremas para café y té, y tienen buena estabilidad sin el uso de emulsionantes sintéticos.
