Abstract

Se describe un método para preparar los carbohidratos protegidos contra los efectos de rumen para el uso en alimentos para rumiantes al inducir la reacción de Maillard entre una fuente reductora de carbohidratos y una fuente de proteína. También se describen los productos hechos mediante el proceso y los métodos para mantener o restaurar los niveles de glucosa en la sangre dentro del intervalo de referencia normal para los rumiantes, especialmente durante la transición o bajo la fatiga calorífica.
