Abstract
Los concentrados de color caramelo se preparan al someter una solución de color caramelo a ultrafiltración a través de una membrana semi-permeable que tiene un Corte de Peso Molecular (MWCA) de no mayor que 3000 Daltons para retener los sólidos de caramelo, pero para remover 4 MeI y otras sales. Después de la ultrafiltración, el producto retenido se somete a una etapa de acidificación para convertir las impurezas restantes en sales que luego son removidas. Se obtiene un concentrado estable en anaquel que tiene cuerpos de color con un amplio intervalo de peso molecular.
