Abstract
La presente invención se relaciona con un método para elaborar por lo menos 2 kg (peso seco) de una composición de bacterias de ácido láctico, formulada de 1% a 50% de ascorbato o ácido ascórbico (p/p - materia seca) como antioxidante, en donde el pH se controla a 3 = pH = 8, durante por lo menos la mayoría del proceso de fermentación mediante la adición de una base que no comprende NH3 (amoníaco).
