Abstract
Se describe un proceso para preparar migajas de chocolate. Se proporciona una mezcla de leche y azúcar, o la leche y el azúcar se mezclan de manera conjunta para formar una mezcla y la mezcla se modifica de manera que los sólidos totales están presentes en el rango de 75% a 90% de la mezcla. Durante el proceso de mezclado y/o modificación de la mezcla, el licor/masa de cacao se agrega a la mezcla. La mezcla posteriormente se somete a condiciones efectivas para llevar a cabo la cristalización del azúcar en la mezcla y se secan para formar la migaja de chocolate.
