Abstract

La presente invención se refiere a un método para incrementar la cantidad de vitamina K2 obtenida al cultivar al menos una cepa de una bacteria láctica que produce vitamina K2, en donde el cultivo de dicha cepa se realiza en condiciones de células en reposo de manera que la cantidad de vitamina K2 producida por el cultivo de células en reposo es más alta por una proporción de al menos 1.2 a aquella obtenida por el cultivo de dicha cepa bajo condiciones de fermentación estándar. La presente invención también se refiere a la biomasa obtenida del cultivo de una bacteria láctica que produce vitamina K2 de acuerdo al método de arriba. La invención también se refiere a un método para producir vitamina K2, a un método para preparar productos alimenticios, incluyendo productos fermentados y/o productos lácteos frescos, ricos en vitamina K2, y a los productos alimenticios de esta manera obtenidos.
