Abstract

Un producto de huevo reducido producido a través de extracción de fluido superficial que comprende yema de huevo y un huevo entero que tiene una porción de componentes no deseados, tales como colesterol y triglicéridos (incluyendo grasas saturadas), selectivamente removidos de la yema de huevo natural, mientras los componentes benéficos, tales como fosfolípidos, son selectivamente retenidos y mientras el sabor, textura, y/o funcionalidad deseados por el consumidor son retenidos. Un método para producir el producto de huevo reducido comprende por lo menos uno de separar, secar, y extraer y opcionalmente reconstituir. El método de secado continuo produce yema de huevo seca con una estructura de tipo de panal o partícula pequeña con baja densidad permitiendo una extracción y reconstitución efectivas. Además, el método de reconstituir es eficiente y el método de pasteurización es capaz de pasteurizar la yema de huevo reducida en triglicéridos y grasas y el huevo entero reducido en triglicéridos y grasas.
