Abstract
La presente invenci?n trata de reivindicar un m?todo que permite controlar el color en uva de mesa, siendo el color un factor de calidad para su comercializaci?n. La rutas tradicionales para la promoci?n del color, hace uso de productos como el Ethrel y el Metil Jasmonato (MeJa), los cuales liberan o inducen etileno para mejorar el color, aplic?ndose estos, durante el envero para incrementar el color de las bayas, el cual est? determinado por la cantidad y composici?n de las antocianinas de la piel. Una opci?n al uso de estos compuestos son los Oligogalacturonidos (OGAs) con un grado de polimerizaci?n que se encuentra dentro de 7-20 Gp, los cuales tienen la capacidad de inducir las antocianinas, v?a ruta alternativa. La s?ntesis y aplicaci?n precisa de los OGAs, ha dado lugar a integrar un m?todo que permite el control adecuado de la coloraci?n de este tipo de fruto, as? como a la cuantificaci?n de antocianinas totales.
