Abstract
La presente invención está relacionada con los productos alimenticios procesados y más específicamente está referida a una emulsión de aguacate y/o guacamole con estructura semisólida o substancialmente sólida, caracterizada por componerse de una emulsión con estructura pastosa substancialmente sólida en bloque o pastel rebanable ó en rebanas individuales, que comprende: pulpa de aguacate, agua, hidrocoloides, alginatos, emulsificante, inhibidor de enzimas, antioxidantes, conservadores y deshumectante; pudiendo comprender además proteínas, un ácido cítrico, limón en polvo, saborizantes y sal.
