Abstract
The invention relates to the dairy industry, namely to a process for producing lactic acid from fermented whey.The process, according to the invention, comprises the electrolytic treatment of fermented whey with titratable acidity of 100…200°T in the cathodic chamber of an electrolyzer with ion-selective membrane and mesh cathode. In the anodic chamber of the electrolyzer is fed NaHCO3 sodium hydrocarbonate solution. The electrolysis process is carried out at a pH of 4…6 and an anodic current density of 0.01…0.02 A/cm2, with the separation of lactic acid from the solution.
