Abstract

The invention relates to the wine-making industry, namely to a process for producing red wine.The process, according to the invention, comprises stemming of grapes, maceration of whole grapes in fermenting must, crushing of grapes, fermentation of pomace with floating cap, and separation of the new wine. At the same time maceration is carried out in a pulsating flow in a process capacity equipped with a machine mixer, in which the grapes are partially crushed while mixing, with daily supply of the mixture of whole and partially crushed grapes in a quantity of 20…35% of the capacity volume to the final crushing and substitution of the corresponding volume for whole grapes.
