Abstract

L'invention concerne un nouveau procédé dextraction de la chitine et/ou du chitosane assisté par ultrasons et sous irradiation micro-ondes, à partir des carapaces des crustacés comme matière première, en utilisant une hydrolyse acide lors de la déminéralisation pour éliminer les carbonates de calcium et un traitement basique pour solubiliser les protéines, la désacétylation de la chitine ainsi obtenue est effectuée en utilisant une solution basique concentrée à des températures élevées.The invention relates to a new method for the extraction of chitin and/or chitosan assisted by ultrasound and under microwave irradiation, from crustacean shells as raw material, using acid hydrolysis during demineralization to remove calcium carbonates and basic treatment to solubilize proteins, the deacetylation of the chitin thus obtained is carried out using a concentrated basic solution at elevated temperatures.
