Ingredients:
2 lbs chicken, cut into pieces
2 tbsp Jamaican curry powder
1 onion, chopped
3 cloves garlic, minced
1 tsp thyme
1 cup coconut milk
2 cups chicken broth
2 potatoes, diced
Instructions:
Season chicken with curry powder, salt, and pepper.
Sauté onion, garlic, and thyme in oil. Add chicken and brown.
Pour in coconut milk and broth. Add potatoes.
Simmer until chicken is tender. Serve hot.
