Backyard eggs, bacon I canned up a few years ago, fried potatoes with homemade taco seasoning, sour cream, cheddar, pepper sauce.

      I’ll get those bags of bacon ends and pieces, aka irregular bacon cuts. Cram them into a “half pint” canning jar and pressure can them. Then they are shelf stable for years. When I need bacon I grab a jar and toss the bacon into a pan and fry it until crispy. It basically turns into bacon bits in the process.

    I often make something similar with two eggs scrambled with diced turkey kielbasa and shredded cheddar. Protein-dense and freezes great for quick morning nuke-and-run.

    Looks as delicious as the potatoes are colorless. Trick of the light? Ribbing aside, that does look mighty tasty
