Boudin is my all time favorite. I make it on Xmas Eve and my wife鈥檚 birthday in May. We don鈥檛 make it any other time because we eat nothing but boudin for days afterwards and eventually crash out.
Recipe here. I鈥檝e tried a bunch of recipes and this one鈥檚 the best by a mile. I smoke em at 275 for a few hours to get a snappy casing.
