API updates for dashboard beta v1

feat/echapon/api_dashboard_betav1 into main

A few more changes are needed before the release of the "beta v1" of the dashboard, mainly:

  • simplify / streamline the output of /tags/<string:tag>/serial_numbers
  • restrict the output of the latter endpoint to a given time window

We have tested that the new dashboard works with the result of this merge request. I will prepare another merge request in parallel for the documentation of the whole API.
