Proto/Benchmarks: use intercept name for intercept benchmark.

Context

!8541 (merged) changed the parameter name for the intercept benchmark of carbonated_map/find. The name in the regular benchmark and the intercept case are different and as a result inference doesn't work properly.

This request fixes the issue.

Also, the name for traversal_overhead is reinstated, as it was incorrectly changed to traverse_overhead.

Manually testing the MR

Run

./octez-snoop list all parameters | grep carbonated_map

and see as carbonated_map/find_intercept/const is there before. It's the parameter name for the intercept benchmark. Notice how it's gone after this request.
