Allow block and operations to output operations with attestation kind through RPC versioning

Context

This MR allow the blocks/<block> and blocks/<block>/operations RPCs to output endorsement and attestation kind in the JSON formatted output operation using a version argument in the RPC call.

This MR fixes #5384 (closed)

Run the following commands:
