Client and logs: refactor both to enable internal_events config into clients

Context

The aim of this MR is to standardize the behavior of clients and the node with respect to log configuration. Specifically, we incorporate internal_logs into the client configuration file.

Upon completion of this merge request, our goal is to enable daily info logs in the baker, as outlined in !8232 (merged).
