Proto tests: provide simpler helpers constructors for (pre-)endorsements

This MR aims at simplifying protocol tests involving pre- and endorsements.
It simplifies the endorsement and preendorsement helpers and replaces each of them by two alternatives: one providing packed_operation, the other unpacked ones.
