doc: Rename to Octez - Sweep 2

Context

This is follow-up to !6289 (merged) of renaming Tezos to Octez, catching the instances that were missed. To address #1737.

There are other MRs that are addressing a narrower set of occurances such as !6679 (closed) and in the Typo train !6671 (merged). The aim is to either bring those all into this one, or at least coordinate on the merging of these overlapping MRs.
