Irmin 2.10

Update to Irmin 2.10.

The changes in lib_protocol_environment are a bit involved as I have "snapshotted" the signature for V4 to prepare the changes needed for env V5.

03ca1fad will be removed once irmin 2.10 is released and added to tezos/opam-repository (this is currently blocked on an issue with s390x builds).
