This Simple MR aims to refactor the usage of a dedicated history mode for etherlink rolling nodes.

Manually testing the MR

Should not be necessary but you can try to run a scenario with etherlink dune exec tezt/tests/cloud/main.exe -- DAL --localhost -v --tezt-cloud --website --prometheus --grafana --monitoring --etherlink --etherlink-dal-slots 8 --etherlink-producers 1

Checklist
