Context

Activates the daily logs, using the default configuration. Also improving a bit the events section and such to have nice logs!

Manually testing the MR

$ tezt-etherlink -f evm_sequencer.ml --only 1 --keep-temp
$ cat /tmp/tezt-XXXX/1/evm_node1/daily_logs/daily-20240130.log
