[DRAFT] Set default mode to colour in Trace Bitmap dialog

This is untested as I seem to have a different GTK version in my system inkscape and just wanted to basically get an opinion on this. Because I think, most people who open that dialog in 2025+ would like to do a multi-color vector trace..
