How to cook a whole branzino in salt crust!  This is hands down one of the easiest ways to cook a whole fish. It’s a Mediterranean method of cooking where you cook the whole fish in salt. This crust allows the fish to bake and trap in all the moisture, making the fish extremely moist!  Ingredients:  • 1 whole fish, I used Branzino, gutted and scales on  • 4.5 lbs sea salt  • 3 egg whites  • 1 lemon, sliced  • a few sprigs dill  • A few sprigs thyme   Instructions:  • Mix salt with egg whites until you get a wet sand texture  • Preheat oven to 400 F  • Line a sheet tray with foil and add half the salt, pack it down. Add the fish on top, stuff with lemon and herbs. Top with remaining salt and pack down so it’s completely covered.  • Bake for 25 minutes   • Break the crust open with a butt
