Idli are steamed fluffy rice ‘cakes’ that are made from a fermented rice and lentil batter and are commonly paired with a sambar & coconut chutney. Although usually served for breakfast, they also make a fantastic lunch & dinner!

Besides their rich flavour, the fermentation increases the availability of amino acids and makes the carbohydrates and proteins in the batter easier to digest, which gives idli their highly nutritious reputation.

Fermenting the batter can be a bit tricky and I’ve shared the tips that worked for me on my website, where you can also find the full recipe for the sambar and coconut chutney. Once you know how to make them, they will quickly become one your favourite easy meals to make as you can keep the batter in a fridge and whip up fresh idli

Idly / Dosa Batter | இட்லி தோசை மாவு  Ingredients:   • 1.Idly boiled rice-3 cups   • 2.Raw rice -1 cup   • 3.Urad dal-1 cup   • 4.Fenugreek seeds-4 teaspoon   • 5.Sufficient water  6.Salt   METHOD:   • 1. Soak rice together.   • 2. Soak urad dal and fenugreek together.   • 3. Soak them all over night or minimum 6 hours.   • 4. Use grinder to blend or use blender too, which ever you are comfortable with or have it with you.   • 5. First grind urad dal, it should be fluffy. Grind for 20 minutes.   • 6. Grind rice next for 10-15 mins. If you want smooth idlies grind the rice batter a little more. Don’t add too much water.   • 7. Add salt and mix and allow it to ferment well.   8. Here is how I make them :  Ingredients:  2 cups Idli rice  1/2 -2/3  cup urud dal  1/2 cup boiled rice  1tsp fenugreek seeds  Soak everything separately for atlest 6 hrs  Grind them separately adding minimal water.  Pour the grinded batter, one over the other and mix nicely with hands adding required salt.  Keep it covered overnight to ferment and you can you it from the next day.  Steam idlis for 7 -10 minutes until done and demould when not hot.  Some additional tips  Wash n soak the rice n days and use the water used for soaking urud dal and fenugreek for grinding the batter.  The batter stays good in fridge for a week, just take it from one side and the rest batter should be unaffected ( Don't mix the entire batter everyday).  Pour the batter for idli directly to the steaming plates
