If you use a 50g mold, use half snowskin 25g and half filling 25g • Ferrero Rocher candy is about 13g, so you will need about 12g of chocolate ganache • Melt chocolate and cream in a double boiler • For ease of constructing the Mooncake, place chocolate into a small mold with the candy and cover • Refrigerate until set, usually 30 min • Remove and weigh the ball (remove an excess chocolate) • Freeze until set • Flatten out Mooncake • Place chocolate ball into snowskin. Let it rest until filling becomes softer • Place into mold and press!
