Ingredients: 1 cup cooked beets 1 can chickpeas (drained) 2 tbsp tahini 1 garlic clove Juice of 1 lemon Salt to taste Sliced veggies (carrots, cucumbers, peppers) Directions: Blend beets, chickpeas, tahini, garlic & lemon until smooth. Season with salt. Spoon into mini cups. Add veggie sticks & chill.
