By @Plantyou Ingredients 5 medjool dates, soaked in hot water for 5 minutes 1 cup plant-based milk 1 cup date seed coffee, regular coffee or more plant-based milk ¼ cup dark chocolate, vegan, chopped 2 tbsp cocoa powder 1 sprinkle Cinnamon Instructions Bring 1 cup of water to a boil and pour it over the dates. Allow them to soak for 5 minutes, and then blend until a smooth paste is formed. In a saucepan over medium heat, add the date paste, date seed coffee, plant-based milk, chocolate, cocoa powder and cinnamon. Whisk until everything is combined and heated, then enjoy immediately, with vegan marshmallows and whipped cream if desired.

No-bake CARROT CAKE BITES🥕🥥
Ingredients  20 dates, deseeded Hot water, for soaking dates 1 cup oats ½ cup roasted almonds ½ cup roasted walnuts  3 tbsp cocoa powder 2 tbsp espresso 1 cup (175g) dark chocolate, melted 1 tbsp vegetable oil  Instructions  1. In a bowl, add dates and soak them in hot water for 15-20 minutes.  2. Take a blender jar, add oats, almonds, walnuts, and cocoa powder. Blend everything together until a coarse texture is achieved.  3. Now, add soaked dates and espresso into this mixture and blend again until it’s nicely combined.  4. Take small portions of the mixture aof the mixture and press them into sections of a rectangular silicone tray. Ensure that you press the mixture firmly into each section, shaping it to fit the mold.

This date caramel is soooo moreish and can be used as a refined sugar free sweetener for oats, chia puds, in baking, coated in chocolate for a treat or even by the spoonful. 

I used @colessupermarkets Royal Dates - I’d never tried them before but they were delicious! Sweet and plump like medjool but maybe a touch less syrupy but about half the price per kilo. Was super happy with the finished result. I’ve also tried date caramel with dried pitted dates and it also works well, you just have to soak them for a lot longer and the colour comes out a lot darker. Still super tasty. So you can really use any dates and get a great result!!
