Holi is incomplete without having Puran Poli. This Maharashtrian holi speciality is a must have on Holi. Puran Poli recipe For the filling also called Puran- Pressure cook chana dal with pinch of salt, turmeric & a spoonful of ghee till it becomes soft. Strain the water. (You may use this to make amti). Add 1/2 cup jaggery to 1 cup chana dal & mix well on low flame. Blend it for smooth consistency. Cook for 2 more mins. Turn off the flame & add cardamom powder & nutmeg. Make it into small balls. For poli or Dough- Take 2 cups of wheat flour & 1/2 cup maida. Add pinch of salt, turmeric & oil. Knead a sticky dough. Keep kneading till it becomes soft & manageable. Gujrati Puran Poli Ingredients : • 1 cup Pegeon Pea Seeds (Tuvar dal - soaked for 2-3 hours) • Less than 1/2 cup Water • 3/4 cup Jaggery (Gur) • 2-3 Cardamom Powder • Few Saffron Strands • Some grated Nutmeg Powder • 1 cup Wheat Flour (kneaded dough) • Ghee Method : • In a pressure cooker, add 1 cup soaked Tuvar Dal • Add less than 1/2 cup Water • Cook up to 2 whistles • Transfer the dal in a pan • Add 3/4 cup Jaggery (Gur) • Cook until jaggery melts and keep stirring • Add 2-3 Cardamom Powder • Add few Saffron Strands • Grate some Nutmeg into the mixture • Keep stirring for 10 min on slow to medium heat until the mixture turns thicker • Transfer the stuffing on a plate • Knead a dough from Wheat Flour • Roll out few balls from the dough prepared • Add stuffing i
