Idli are steamed fluffy rice ‘cakes’ that are made from a fermented rice and lentil batter and are commonly paired with a sambar & coconut chutney. Although usually served for breakfast, they also make a fantastic lunch & dinner!

Besides their rich flavour, the fermentation increases the availability of amino acids and makes the carbohydrates and proteins in the batter easier to digest, which gives idli their highly nutritious reputation.

Fermenting the batter can be a bit tricky and I’ve shared the tips that worked for me on my website, where you can also find the full recipe for the sambar and coconut chutney. Once you know how to make them, they will quickly become one your favourite easy meals to make as you can keep the batter in a fridge and whip up fresh idli

Mini Podi Idli -
 • Steam 18 mini idlis in an idlis stand. Mini idlis cook faster. I steam it for 10 minutes. 
 • To a pan, add 1 tbsp ghee. Once heated, add 1/2 tsp mustard seeds, 7-8 curry leaves and the cooked mini idlis. 
 • Add 1 1/2 tbsp podi masala, mix well and cover and cook for 2 mins on medium heat. Garnish with cilantro and enjoy. 

Malgapodi/ Podi Masala (makes 1/2 cup) -
 • 1 1/2 tbsp peanuts, 1 tbsp urad dal, 1 tbsp chana dal, 3 dry red chilies, 1 tsp sesame seeds, 1/2 tsp cumin seeds, 10-12 curry leaves, salt. 
 • Dry roast for 5 minutes in medium heat and blend until a powder mixture is formed. 
 • Store in an air tight container upto 3 months.
