Not just anywhere: Carbone, the red-sauce Italian restaurant that had become the hottest reservation in New York. "It's the place for my generation," she told him. "I've already been to Rao's with you." Five years later, Skae has turned that generational insight into a sauce brand that has surpassed $100 million in retail sales, landed in 30,000 stores, and deliberately abandoned traditional advertising in favor of a strategy built on earned media, events and a single borrowed philosophy from the restaurant: dinner is the show. His daughter wanted Carbone for her birthday. He was running Rao's. "It's the place for my generation," she told him. "I've already been to Rao's with you." That moment stuck with Eric Skae. So when he got the chance to build a sauce brand around the Carbone restaurant, he said yes — even though he'd already done it once before with Rao's. Five years later, Carbone Fine Food has surpassed $100 million in retail sales and landed in 30,000 stores. In my latest Forbes CMO Network interview, Skae shared the playbook. Three things stood out: 𝟭. 𝗛𝗲 𝗿𝗲𝗳𝘂𝘀𝗲𝗱 𝘁𝗼 𝗹𝗮𝘂𝗻𝗰𝗵 𝗵𝗶𝘀 𝗯𝗲𝘀𝘁 𝗽𝗿𝗼𝗱𝘂𝗰𝘁. Carbone is famous for spicy vodka sauce, but Skae held it back because he couldn't match the restaurant's quality in a jar. Instead of compromising, he turned it into a recipe ingredient — letting the home cook finish it with cream and butter. The constraint became the innovation. 𝟮. 𝗛𝗲 𝗮𝗯𝗮𝗻𝗱𝗼𝗻𝗲𝗱 𝘁𝗿𝗮𝗱𝗶𝘁𝗶𝗼𝗻𝗮𝗹 𝗮𝗱𝘃𝗲𝗿𝘁𝗶𝘀𝗶𝗻𝗻𝗴. A 60-day campaign in Miami with CTV, outdoor, and a branded truck produced a 4% lift. So he stopped. Now Carbone's entire marketing strategy runs on events, social, and PR — because that's what's authentic to the brand. 𝟯. 𝗛𝗲 𝘁𝗵𝗶𝗻𝗸𝘀 𝗱𝗼𝘄𝗻𝘁𝘂𝗿𝗻𝘀 𝗳𝗮𝘃𝗼𝗿 𝘀𝘂𝗽𝗲𝗿 𝗽𝗿𝗲𝗺𝗶𝘂𝗺. When consumers tighten their purse strings, they cook more at home — and they want to cook better. Carbone isn't playing the discount game. His advice to new CPG founders? "Don't do it."
