On the "marriage" to Giles, Sue is referred to as "Princess Sue". But as she's a commoner (established early on), she does not gain that title. "Princess X" is someone born into royalty. She would be "Sue, Princess (of whatever Giles is prince of)". For comparison, Diana was never "Princess Diana". She was "Diana, Princess of Wales".
