FAVORITE SOUPS.....

Over at the Gooseberry Patch it's Recipe Round Up time and they are asking.....

What are YOUR favorite SOUPS, STEWS AND CHILI recipes?
Share 'em all in today's Recipe Round-Up.


Around here it's usually Vegetable Soup, Chili or Potato Soup.  And sometimes we have Clam Chowder that my son makes.  My favorite is Potato Soup.

Potato Soup
 







Ingredients

10 – 12 potatoes
Milk
Bacon
Onion
Salt & Pepper

Clean and dice potatoes into thick pieces.  Cook potatoes until tender.  Fry 2 strips of bacon drain and cut into small pieces.  Cut and dice ½  of an onion.  Add bacon, onion, salt and pepper to potatoes.  Bring to a simmer.  Turn off heat and add milk. DO  NOT  BRING TO BOIL…..Add thickening and stir.  Bring to a simmer.  DO NOT BRING TO A BOIL.

THICKENING
Flour
Water
Mix and stir until dissolved.
Add to potatoes and stir until desired thickness. 

The next favorite is Chili.  I usually have my chili with a baked potato.  I put the chili over the top of my potato and enjoy.

 Chili Soup










 Ingredients

1 – 2 lb. Hamburger
1 teas. Chili Powder
2 15 oz. cans Tomato Sauce
1 15 oz. can Chili Beans

 1 small onion
 2 – 3 cans of water

OPTIONAL – 2 handfuls of elbow macaroni

Fry hamburger, add onion and cook until onion is transparent.  In a large pot add hamburger and onion mixture.  Mix in chili powder, chili beans or red kidney beans.  Add tomato sauce and water.  Bring to a boil.  If desired, add macaroni.  Cook until macaroni is done.

BARBEQUE CHICKEN......

My son makes the best Barbeque Chicken.  He puts the chicken in a baggie with the barbeque sauce (your choice of barbeque sauce),  my son prefers Open Pit Barbeque Sauce and lets it marinade over night. The next day put it in the oven on 375 or put it on the grill.  Either way it is delicious.

NEW YEAR'S DAY DINNER.....

We had Cabbage Rolls, Fried Potatoes and Corn Bread for out New Year's dinner.  It was delicious!  I'm going to try and do the recipe.  But it's kind of tricky.  It's done from memory of my mom doing this.  So there aren't any regular measurements.  First thing to do......soaking a head of cabbage in hot water for about an hour or more.  Before soaking, cut down the sides of the core. 
After soaking, pull the leaves off one at a time.  Pull off as many as you want.
Next, mix up your hamburger mixture.  1 pound of hamburger, about a cup of uncooked rice, and 2 eggs.  It's kind of like making meat loaf. 
Now at a scoop of mixture to a cabbage leaf and roll it up.  Place in a pan.
Cut up what's left of the cabbage and place in the pan with the cabbage rolls.
Add about 3 16oz. cans of tomato sauce.  Then add enough water to cover the cabbage rolls.  Cook until the cabbage is done.  Then enjoy the meal.

PANCAKES ANYONE

Sometimes we have breakfast for supper.  It's fast and easy and everyone loves it.  What is it?  Eggs, Bacon, Cereal??  None of the above.  It's Pancakes.  I personally like mine with butter, peanut butter and maple syrup.  Plus we make them from scratch, not a pancake mix.  Here is the recipe if you want to try it out.

PANCAKES
1 1/2 C. Flour
3 1/2 tsp Baking Powder
1 tsp Salt
1tbsp White Sugar

1 1/4 C.Milk
1 Egg
3 tbsp Butter(melted)

1/4 of a cup of batter makes a really good size pancake.

VINTAGE RECIPE THURSDAY

My sister gave me this recipe years ago. I've used it countless times. Although it doesn't really taste like a muffin to me, it kind of reminds me of a biscuit, only fluffyer. And since I can't make biscuits, this is the next best thing. You know, the old fashioned kind mom used to make. Anyway here's the recipe. Sorry don't have any pictures. But they are yummy with some butter and jelly!

Muffins

1/4 C. Sugar
2 C. Flour
1 Teaspoon Baking Powder
1 Teaspoon Salt
1 Egg
1 C. Milk
1/4 C. Shortening

In a medium size bowl mix until blended. NOTE: do not over mix, there will be lumps. Pour into well greased muffin tin. Bake at 400 degrees for 20 - 25 minutes. Serve hot. Makes about 12.

VINTAGE RECIPE THURSDAY


I've probably posted this before but it's really good and deserves another go round. It's called Wacky Cake and my Great Aunt Evelyn gave me the recipe a long time ago. Way back when I was a new bride and mother to be. So it's been a few years. It's also a favorite around here. Usually I don't put icing on the cake, it's moist enough to stand on it's own.

Wacky Cake


Ingredients

3 C. Flour
2 C. Sugar
2 teas. Baking Soda
1 teas. Salt
6 T. Cocoa
2 C. Water
2 teas. Vanilla
2/3 C. Oil
2 teas. Vinegar

In a large mixing bowl, mix all ingredients well. Pour into a well greased and floured 9 X 11 cake pan. Bake at 350 for 35 to 45 minutes. Or until toothpick inserted comes out clean.

VINTAGE RECIPE THURSDAY

When I was a little girl my mom made some wonderful stuff to stretch her food dollar. We were a family of 7 at that time. Mom and Dad, and 5 children. So trying to stretch the meals economically and tastefully was something she did. One of the things she did was make a salad dressing of her own. As we couldn't afford to buy ready made. So she used what she had on hand. Everyone loved it too! It hasn't got a fancy name, actually it hasn't got a name at all. We just call it salad dressing.


SWEET SALAD DRESSING

2 heaping tablespoons Miracle Whip Salad Dressing
1 tablespoon Sugar(or to taste)
Sprinkle of Parsley(dried or fresh)
Milk

In a small bowl mix all ingredients until smooth. The milk is to smooth it out and thin it. So add milk until it is the consistency you like. This makes about enough for 4 salads. To make more just add more Miracle Whip, Sugar and Milk.

VINTAGE RECIPE THURSDAY


This is a recipe I got years ago from my Great Uncle Gail. He was an awesome cook! This one takes a little work and time, but well worth the effort.


Noodles

6 Egg Yolks
1/3 C. Milk
1/2 teaspoon Salt
1/4 teaspoon Baking Powder
2 tablespoon Margarine
3 C. Flour

Mix all ingredients until a ball forms. Put a layer of flour down on the table before rolling. Roll out dough and let dry 4 hours. Cut into strips. Add to chicken stock. You can add some of the flour from the table to the pot for thickening.

VINTAGE RECIPE THURSDAY

This is a favorite at our house. I've posted it here before. I think it needs posted again. I got this recipe a long time ago when I went to Weight Watchers. It's been 30+ years ago. I make it a lot during the holidays. It's fast and easy to make ahead of time. Pop on some raw veggies or chips and your ready.













VEGGIE/CHIP DIP
1 16oz. container of Plain Yogurt
1 original pkg. Hidden Valley Dressing Mix(powdered form)
1 tablespoon Parsley Flakes
Mix all ingredients well. Let sit, covered, overnight in the fridge
Veggies you can use:

Carotts
Cucumbers
Bell Peppers
Celery
Cherry Tomatoes
Green Onions

VINTAGE RECIPE THURSDAY

I got this recipe from my Great Aunt Evelyn. It's a really easy recipe and the cake is so moist. I've got another recipe that is similar to this one that I got from a good friend. It's called a Pineapple Cake.










Good Cake

Ingredients
2 Eggs-beaten
2 C. Sugar
2 C. Flour
2 teaspoon Baking Soda
Pinch of Salt
20 oz. can of crushed pineapple(reserve juice)
1 C. Nuts-chopped(Optional)

In large large bowl beat eggs, add sugar, flour, baking soda and salt. Mix well. Add pineapple with juice and chopped nuts. Continue mixing until all is combined. Pour batter into a well greased and floured 9 X 11 cake pan. Bake at 350 degrees 45 minutes. Remove from oven and cool.

ICING

1 stick Butter
2 C. Confectioners Sugar
2 3oz. pkg. Cream Cheese
1 teaspoon Vanilla

In a mixing bowl combine all ingredients. Beat until creamy. Spread over cooled cake.

VINTAGE RECEIPE THURSDAY


This is a recipe from my mother's cook book. We had these when I was a little girl. Don't know the actual name of them, only know them as Candy Cookies. That's what we called them. They are so yummy!

Candy Cookies

Ingredients

1 stick butter
2 C. sugar
1/2 C. milk
2 tablespoons cocoa
3 C. uncooked oat meal(not quick oats)
Wax Paper

In a good size pan, melt butter, add sugar, milk, and coca. Bring to a boil, stirring often. Add oatmeal and stir until blended. Remove from heat.

Drop by the spoonful onto wax paper. They will spread out. Let them cool. You can also put them in the fridge to cool. This recipe makes about a dozen cookies.

On a hot summer day they are the best treat coming out of the fridge. I don't have a picture of these. I went looking on the internet but couldn't find one there either.

CABBAGE ROLLS RECIPE

Yesterday someone asked me about the recipe for Cabbage Rolls. So I guess I'm going to try and do this. This is mostly a recipe that is just thrown together. I make it from memory. My mom made these all the time when I was a kid. It's a cheap dinner and easy to put together. When your feeding 5 kids and 2 adults like my mom it was a must. So here goes.



INGREDIENTS

1-2 lbs ground beef
uncooked rice
2-3 eggs
Head of Cabbage
3 15oz. cans Tomato Sauce
Water
Salt and Pepper

PREPARATION
Soak a medium head of cabbage in hot water. I usually fill up my sink with hot water and let the cabbage head soak for about an hour, turning it once in a while. Once the cabbage is soaked pull off the leaves individually. Lay aside.

In a large bowl mix ground beef, uncooked rice, and eggs. I mix it until it's nice and firm like a meatloaf.

Take a handful of the mixture and place in one cabbage leaf. Roll and place in large pan.

Add tomato sauce and about 4 to 6 cans of water. Add salt and pepper as desired. Bring to a hard boil and then turn heat down to simmer. Cook until cabbage is done.

I usually serve fried potatoes and cornbread with this. Hope this all makes sense to you.

CHICKEN WINGS


Monday my son, Tommy, was rummaging around in the freezer for something to cook. He found a pack of Chicken Wings. So he split them in half and made some barbecue and the other half with Garlic Butter. They were delicious! He used some Open Pit Barbecue Sauce on the barbecue wings. The Garlic Butter wings he made the garlic butter his self.







GARLIC BUTTER
1 cup butter, softened
1 tablespoon minced garlic
1 tablespoon garlic salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground paprika

In a small bowl, combine softened butter and minced garlic. Season with garlic salt, pepper and paprika. Mix until smooth.

This is really yummy and doesn't take long. The wings didn't last long.

EGGS



Mediterranean Eggs
1 tsp olive or vegetable oil
4 medium green onions, chopped (1/4 cup)*
1 medium tomato, chopped (3/4 cup)*
1 tbsp chopped fresh basil leaves or 1 teaspoon dried basil leaves
4 eggs or 1 cup fat-free cholesterol-free egg product
Freshly ground pepper

Heat oil in 8-inch nonstick skillet over medium heat.
Cook onions in oil 2 minutes, stirring occasionally.
Stir in tomato and basil.
Cook about 1 minute, stirring occasionally, until tomato is heated through.

Beat eggs thoroughly with fork or wire whisk.
Pour over tomato mixture.

As mixture begins to set at bottom and side, gently lift cooked portions
with spatula so that thin, uncooked portion can flow to bottom.
DO NOT STIR!!!!

Cook 3 to 4 minutes or until eggs are thickened throughout but
still moist. Sprinkle with pepper.

APPLESAUCE SPICE MUFFINS

A few weeks ago I was in a second hand store looking around. I ran across this cute little book. I have also been wanting some Blueberry Muffins. The only recipe I had for Blueberry Muffins wasn't a muffin, but more like a biscuit. So I picked this little book up.



Well, it has Blueberry Muffins and so much more. I decided to go with the Apple Spice Muffins. And were they ever good!!

APPLESAUCE SPICE MUFFINS
Makes 12 Muffins

1 3/4 C. Flour
2 1/2 teaspoons Baking Powder
1 1/2 teaspoons Cinnamon
1/2 teaspoon Salt
1/4 teaspoon Ground Cloves
2 Eggs
1/2 C. + 2 tablespoons Brown Sugar
1/4 C. Vegetable Oil
1/2 C. Milk
1 C. diced peeled Apple
1 tablespoon Lemon Juice
1/2 C. Applesauce
1/2 teaspoon Cinnamon mixed with 3 tablespoons Sugar for topping

Preheat oven to 375 degrees. Grease or line muffin tins with paper cups. Combine flour, baking powder, cinnamon, salt, and cloves in medium bowl. In another large bowl, whisk together eggs, sugar, oil, milk, apple, lemon juice, and applesauce. Add flour mixture to liquid ingredients and stir just until flour disappears. Spoon into muffin cups. Sprinkle tops with cinnamon sugar mixture and bake 25 to 30 minutes until tester comes out clean. (I use a toothpick inserted into muffins to see if they are done.)

Here they are fresh out of the oven. As you can see I got a few more than 12.

STUFFED PEPPERS

I found this recipe over at About.com The whole family loved this. It was really yummy!!

STUFFED PEPPERS WITH GROUND BEEF AND RICE



INGREDIENTS:
6 green bell peppers
1 tablespoon butter
1 tablespoon olive oil
1/2 C. chopped Onion
1/2 C. chopped Celery
1 can (14.5 oz.)diced tomatoes
1 can (8oz.)tomato sauce
1 clove garlic, crushed
1 teaspoon dried leaf oregano
1/2 teaspoon dried leaf basil
2 teaspoon salt, divided
1/2 teaspoon ground black pepper, divided
1 egg, lightly beaten
1 1/2 teaspoons Worcestershire sauce
1 1/2 pounds lean ground beef
1 1/2 C. cooked rice
shredded mild cheddar cheese, Optional

PREPARATION:
Cut tops off peppers; remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Place peppers in a large pot; cover with salted water. Bring to a boil; reduce heat, cover, and simmer for 5 minutes. Drain peppers and set aside.
Heat olive oil and butter in a large skillet over medium heat until hot. Saute chopped green pepper(from tops), chopped onion, and chopped celery for about 5 minutes, or until vegetables are tender. Add tomatoes, tomato sauce, crushed garlic, oregano, basil, 1 teaspoon salt, and 1/4 teaspoon of pepper. Simmer for about 10 minutes.
In a large mixing bowl, combine egg and remaining 1 teaspoon salt and 1/4 teaspoon pepper, and Worcestershire sauce. Gently stir to blend; add ground beef, cooked rice, and 1 cup of the tomato mixture. Mix well. Stuff peppers with meat mixture and place in a 3-quart baking dish. Pour remaining tomato mixture over the stuffed peppers. Bake at 350 for 55 to 65 minutes. If desired, top stuffed peppers with a little shredded cheddar cheese just before peppers are done; bake until cheese is melted.

SERVES 6

MEAT LOAF


My son makes a great Meat Loaf. I just hope I got this all right. I was asleep the other night when he gave me the recipe. LOL


MEAT LOAF




INGREDIENTS

1 lb. Hamburger
1 lb. Bulk Sausage
2 T. Mustard
3/4 C. Ketchup
1 Egg
1/2 t. Worcestershire Sauce
1/2 t. Soy Sauce
8 Crackers
1 can Hunts Stewed Tomatoes
5 Sticks of Celery
1 whole Onion - Diced
1 T. Butter
1/2 t. Parsley
1/2 t. Italian Seasoning
1/2 t. Basil
3 cloves Garlic - Diced

In a large bowl, mix all ingredients well. Shape into a loaf. Apply a thin layer of ketchup on the top of the loaf. Place in small roasting pan. Add 1 can of chicken broth and 1 can of water to roasting pan and cover. Bake about 1 hour at 350. If desired, add potatoes and carrots the last 20 minutes of cook time. Cook until potatoes and carrots are done.

VEGGIE DIP


Ever have a get together and can't think what to serve? This is one of those things that can be thrown together really fast and it's kind of easy. If you have a little notice you can chop the veggies the night before. The dip it self should be refrigerated over night, but you can serve it the same day.

VEGGIE DIP

1 16oz. container of Plain Yogurt
1 original pkg. Hidden Valley Dressing Mix(powdered form)
1 tablespoon Parsley Flakes

Mix all ingredients well. Let sit, covered, overnight in the fridge

Veggies you can use:
Carotts
Cucumbers
Bell Peppers
Celery
Cherry Tomatoes
Green Onions

This is also great with chips and corn chips.
