After three days I was ready to try that breakfast fatty I had made with my fatty stuffer. One day to make the stuffing, second day to assemble & smoke it, eat it the third day. I made some hollandaise sauce, I cheated & used Knorr’s packaged sauce mix. I browned up two slices of the fatty, fixed two eggs, and toasted some cinnamon toast. I topped the slice of fatty with an egg, & hollandaise sauce. Bacon, sausage, eggs & toast, it made a good lunch. The wife & I both liked it, myself I liked the hollandaise sauce but I think I would prefer some white sauce, or sausage gravy on it. I like my sausage fatty stuffer; it makes for a uniform sized fatty. Now if I can just learn to wrap it as neat as Cowgirl!!
My supper tonight will be a pulled pork pie, done on my Traeger. These two meals are a little heavy in one day. My wife usually eats a salad every day & I eat a light lunch.

There are not many blogs out there dedicated to cooking on a pellet smoker. I have been cooking, grilling & smoking over 35 yrs now. I recently bought a Traeger Lil Tex Elite pellet smoker & have cooked on it over six yrs. now. I would like to share recipes & info I have gained from cooking on it. Update 2014: I have plenty of recipes here for the pellet smoker so I am now including other outdoor cooking and some of my indoor cooking too.
