I'd like to use Xournal to right down mathematical derivations. I would like to be able to add new shapes to the shape recognizer. Ideally, greek letters, in any font (or a latex similar font).

How hard would that be to do?

That would be extremely hard. The shape recognizer does not work as a handwriting recognition algorithm at all and is unsuitable for non-geometric shapes.

If your goal is to produce a "typed-alike" document then I don't think xournal is the appropriate tool (at least in its present form; maybe in the future there'll be some handwriting recognition features, but it's a really difficult thing to do and that's not the main goal for now).
