Dosa is one of my many favorite Indian foods as it is a combination of crispiness and smooth texture all at once. Today we are making the healthy version of dosa while using only high protein ingredients which will make it a perfect meal for iftar as well as suhour in Ramadan.

Ingredients:

Dosa (Indian Crêpes):
¼ cup chana dal (Yellow lentil)
¼ cup tour dal (Pigeon peas)
¼ cup oat
1-2 green chili
½ teaspoon ginger fresh or paste

Aloo Masala (Potato with spices):
2 tbsp oil
1 tsp mustard
1 dried red chili
Curry leaves (add a few)
A pinch of hing (asafoetida), is optional for those who don’t have it but it adds a good taste to the food.
2 finely chopped green chili ( you can use less or more depending on your spicy level)
1 tsp ginger paste or fresh
Sliced onion
¼ tsp turmeric
1 tsp salt

Ingredients for Set Dosa In a bowl Add,  1 Cup Rava/ Semolina 1 Cup Curd Wash and rinse and add 1 Cup Poha/ Flatten Rice 1/2 Cup Water - Mix and cover. Let it rest for 5 Minutes.  - ⁠After 5 minutes, Add this to a blending jar with 3/4th Cup water and grind to a very smooth paste. - ⁠Add 1 Tsp Salt, 1/2 Tsp Baking Soda. Mix well and pour on a hot tawa and cook on high flame initially. Then you can lower the flame till bottom turns golden in color. Cover and cook if needed. Do not flip.  - ⁠Set Dosa is ready. - ⁠serve with tomato chutney and special aloo bhaji
