Abstract

1481694 Fat compositions for margarine UNILEVER Ltd 9 Dec 1974 [10 Dec 1973] 57132/73 Heading C5C A fat composition contains at least 20% by weight of a palm type oil, which is co-randomized with a marine oil or a hydrogenated marine oil, the weight ratio of palm type oil to marine oil in the co-randomized blend being from 20: 80 to 80 : 20. Palm type oils are hydrogenated or unhydrogenated palm oils and solid and liquid fractions thereof. Suitable marine oils are herring, sardine, anchovy, pilchard, menhaden, whale or other marine mammal oil. The composition may also contain other oils, e.g. lauric fats, e.g. palm kernel, coconut and babassu oils and/or other non-lauric vegetable oils, e.g. soyabean and sunflower oil or their partly hydrogenated derivatives. Margarine and other plastic emulsion food spreads may be prepared from the fat compositions. In the examples, margarine is prepared by adding an emulsion comprising skim milk, vitamins and salt to the fat composition containing monoglyceride emulsifier, lecithin and colouring matter.
