Abstract

Se reducen o eliminan los componentes de extractos de salvado de arroz que presentan acción inhibidora del suwari, permitiendo una utilización más amplia de los mismos para los productos de pasta de pescado. Se individualizan los componentes que poseen determinadas funciones fisiológicamente activas en un extracto de salvado de arroz y luego se reducen o eliminan estos componentes. Los componentes son componentes inhibidores del suwari. El extracto de salvado de arroz es preferentemente un extracto acuoso. Los componentes se reducen o eliminan mediante precipitación o diálisis. La precipitación es precipitación por calcio. Los componentes inhibidores de suwari son fitina y/o ácido fítico. El extracto de salvado de arroz se puede usar como un aditivo para pastas de pescado.
