Abstract
La presente invención se refiere a un proceso para fabricar una conserva aireada congelada y que comprende las etapas de producir una premezcla que comprende: grasa vegetal o láctea/leche 1 a 15% (p/p), preferiblemente 3 a 12%; sólidos de leche no grasos 0 a 20% (p/p), preferiblemente 3 a 12%; azúcar y otros endulzantes 0.01 a 35% (p/p); proteínas vegetales 0 a 5% (p/p); saborizantes 0 a 5% (p/p); agua 30 a 85% (p/p); 0.25 a 15% en peso (expresado como plasma seco sobre la premezcla húmeda) de una fracción de plasma enriquecida, se agregan a la premezcla de congelación y se airea la premezcla a un sobre rendimiento de 20 hasta 150%.
