Mac OS X has Apple Remote Desktop; I'm not sure if that uses its own protocol, or VNC, or something else.

If you'll take a look on under the hood page you'll see that VNC figures quite prominently there. When used between two Macs it probably uses some additional extensions, but if you package lists Real VNC or OS9vnc in the list of compatible clients then you kind of know what protocol it uses, right?
