INGREDIENTS:  • - 2 cups sushi rice  • - 2 1/4 cups water  • - 1/4 cup rice vinegar  • - Salt Water  • - Nori seaweed  • - 1/4 cup soy sauce + 2 tsp maple syrup  INSTRUCTIONS:  • Rinse the rice with cold water until the water runs clear. Add the rice and water into a pot cook for about 15 minutes or until the rice is cooked.  • Transfer it immediately to a large bowl and add the vinegar. Use a spoon to fold the rice and let it cool.  • Dip your hands in water and sprinkle some salt, add a 1/3 cup of cooked rice to your hand, press into a triangle shape. Repeat until there's no rice left.  • Fry on one side until golden, flip, and cover with the mixture of soy sauce and maple syrup. Keep frying until golden and crispy.  • Wrap with a small piece of seaweed.

How to keep nori (seaweed paper) from getting soggy on onigiri 🍙
Spicy Salmon Nori Wrap  Makes 2  Ingredients:  1 (5 ounce) canned salmon (or baked salmon, shredded)  2 tablespoons mayonnaise  1 tablespoon sriracha (or hot sauce of choice)  1/2 cup steamed white (or brown) rice  2 teaspoons furikake seasoning, divided  1/2 Persian cucumber, very thinly sliced (either into strips or coins)  1/2 avocado, very thinly sliced  2 full sheets nori  salt and pepper to taste  1. In a small bowl combine salmon, mayonnaise and sriracha. Season with salt and pepper. Mix together.  2. Place a sheet of nori on a clean surface. Using scissors (or a knife) make a single cut in the middle of one side, until you get to the middle of the sheet.  3. In the bottom left corner, spread an even layer of 1/4 cup rice (lightly wetting your hands to make it easier to spread).

10min · 4 servings     Crispy rice waffles with Nori//  • 2 cups cooked sushi rice, (can be fresh or leftover!)   • Season with 2 tbsp rice vinegar, 2 tbsp soy sauce, pinch of garlic powder, 1 tbsp grated fresh ginger (optional)   • Season rice with all of the above. Feel free to add and subtract ingredients as you prefer.   Heat waffle iron on high heat, according to manufacturers instructions.   • Scoop about 1/4 of rice per waffle. Press and cook for about 2 minutes while you cut out a circle of nori (this can be sized approximately, and don't waste the excess nori!)   • Lay nori over cooking rice, and it will magically shrink to perfectly fit the rice!   • Cook for about 5 more minutes until the rice is lightly browned and easily removed from the waffle iron.
