Doc: outdated Flextesa invocations

It seems flextesa invocations mentioned at https://tezos.gitlab.io/developer/flextesa.html are outdated. I see for instance that the first argument is called now mini-net not mini-network.

This was observed during a discussion from !4136 (merged).
